Mexican Chaat Cups
Ingredients
For the Filling
- 1 15 oz / 425 g can kidney beans, rinsed and drained
- 1 ripe mango diced
- 1 ripe avocado diced
- 1 medium cucumber diced
- 2 Roma tomatoes deseeded and diced
- ¼ cup finely diced red onion optional
- ¼ cup chopped cilantro
- 1 tablespoon lemon or lime juice
- 1 teaspoon chaat masala
- ¼ teaspoon roasted cumin powder
- Salt to taste
- ¼ cup cilantro chutney recipe in the notes.
- ¼ cup chunky salsa
Toppings
- 1 cup fine sev
- Extra cilantro
- Lemon juice
For Serving
- 24-30 mini canapés or mini tart shells
- Gluten-free tortilla chips
Instructions
Step 1: Prepare the Beans
- Rinse and drain the kidney beans well.
- Pat them dry slightly to avoid excess moisture.
Step 2: Chop the Produce
- Dice the mango, avocado, cucumber and tomatoes into small, even pieces.
- Finely chop the cilantro.
Step 3: Mix the Filling
- In a large bowl combine everything called for the filling.
- Mix gently to avoid mashing the avocado.
Step 4: Prepare the Canapés
- Arrange the canapés on a serving platter.
- Alternatively, arrange tortilla chips around a serving bowl for a gluten-free option.
Step 5: Fill
- Spoon the bean mixture into each canapé just before serving.
Step 7: Sprinkle Sev
- Generously top with fine sev for crunch.
Step 8: Garnish
- Finish with chopped cilantro, squeeze of fresh lemon juice.
- Serve immediately.
