    Quinoa

    Quinoa is protein and fiber rich pseudo grain that keeps you full for long. I cook a big batch of quinoa every alternative week and use it in variety of recipes. Best part is that it cooks in half the time rice takes to cook.

    Black beans

    I have used a can of black beans for busy weeknight dinner. Feel free to make beans from scratch and use them.

    Veggies

    I have roasted red peppers and corn for a deep charred flavor. Plenty of lettuce and cherry tomatoes add a refreshing touch to this salad.

    Dressing

    You’ve gotta try this salad mainly for the dressing. I promise you it is finger licking good. It is healthy, creamy and oil-free. Ripe avocados and yogurt make it creamy, fresh herb like cilantro add so much flavor, kick from the jalapenos is yum, lemon brightens up the creamy texture of the dressing.

    How to Make Quinoa Black Bean Salad

    1. Cook quinoa until fluffy and let it cool.
    2. Roast the corn and bell peppers until lightly charred.
    3. Blend avocado dressing until smooth.
    4. Arrange greens in a bowl.
    5. Add quinoa, beans, tomatoes, peppers and corn.
    6. Drizzle generously with avocado dressing.
    7. Toss just before serving.

    My recipes come with a lot of alternatives. I have used these swaps many times depending on the ingredients available at given point of time. Healthy eating is very easy with these substitutes.

    Ingredients

    For the Salad Bowl

    • ½ cup uncooked quinoa
    • 1 cup water
    • 1 teaspoon olive oil
    • ½ teaspoon salt
    • 1 cup cooked black beans drained and rinsed
    • 1 large corn on the cob roasted (or 1 cup frozen roasted corn)
    • 1 large red bell pepper sliced
    • Spray of olive oil cooking oil of choice
    • ½ teaspoon smoked paprika
    • ¼ teaspoon cumin
    • Salt and pepper to taste
    • 1½ cups chopped romaine lettuce
    • 1 cup cherry tomatoes halved
    • 2 tablespoons chopped cilantro
    • 1 avocado sliced for garnish
    • Lime wedges

    Creamy Avocado Cilantro Dressing

    • 1 ripe avocado
    • ½ cup cilantro leaves
    • ¼ cup plain Greek yogurt or dairy-free yogurt for vegan
    • 2 tablespoons olive oil Skip for oil-free, add water
    • Juice of 1 lime
    • 1 garlic clove
    • 1 tablespoon water more if needed
    • Salt to taste
    • 1 small jalapeño optional

    Instructions

    Instructions

      Step 1: Cook the Quinoa

      • Rinse the quinoa thoroughly under running water to remove any bitterness.
      • Add quinoa, water, olive oil and salt to a saucepan. Bring to a boil, cover, reduce the heat to low and cook for 15 minutes. Let it rest for 5 minutes before fluffing with a fork.
      • Alternatively you can cook it in an instant pot or a stove-top pressure cooker. Directions here.

      Step 2: Roast the Vegetables

      • Spray the corn and bell pepper with olive oil.
      • Season with smoked paprika, cumin, salt and pepper.
      • Roast in a 425°F (220°C) oven or air fryer until lightly charred and tender.
      • Slice the kernels off the cob.

      Step 3: Make the Avocado Dressing

      • Blend together everything called for the dressing until creamy and smooth.
      • Add a splash of water if needed.

      Step 4: Assemble

      • Divide the lettuce between two bowls.
      • Arrange the quinoa, black beans, roasted corn, roasted peppers and tomatoes.
      • Top with avocado slices, chunks or avocado rose.
      • Drizzle generously with avocado cilantro dressing.
      • Finish with chopped cilantro and serve with lime wedges.

      • Let the quinoa cool slightly before assembling the bowl to keep the greens crisp.
