And guess what , these sandwiches are absolutely no cook ones. These coleslaw sandwich bars make an excellent addition to a menu for any occasion . Have it for breakfast, lunch, dinner or even in between the meals snacking . They are surely going to satisfy your tummy. It makes a great lunch pack for kids too. The coleslaw filling can be prepared more than one way and can be enjoyed many ways too. Make sure to go through the entire post for alternatives and substitutes to suit your taste and convenience.
It’s been almost two months since I haven’t posted a single recipe. I was on a fabulous holiday to Mumbai and completely cut off blogging wise . I missed you guys , hope you missed me too. Now that I am back , my apartment is in a mess . So much unpacking and cleaning to do . And I am still in a holiday mood , just don’t feel like cooking. I kinda have to drag myself to the kitchen to make something. And needless to mention all the jet lag is getting me and my son crazy. So made these quick and easy vegan coleslaw sandwich bars which doesn’t require cooking and are express and yummy. We ate it happily without any fuss . I love it when my son eats his veggies readily, and coleslaw has a lot of it.
There are so many ways you can make coleslaw . And every version is equally delicious . So what are these bars made of –
I have used shredded green cabbage , purple cabbage and carrots – takes care of veggie intake
The cream part – equal parts of vegan mayonnaise / spread and vegan cream cheese – takes care of protein and calcium.
Some extra dash of sauces and herbs takes care of bursting flavors.
I have used 12 grain bread which gives it a healthy touch – takes care of required protein and carbs.
Do go through the possible substitution and addition at the end of the recipe which are equally delicious to have.

Coleslaw is absolutely delicious and up’s the flavors when added to wraps, burgers , hot dogs, tacos or pita.
Have coleslaw sandwich grilled or toasted for ultimate crunch.
Throw in some boiled pasta or fruits like pineapples , mango kiwi or add in some boiled potatoes, lettuce and nuts to make a bowl of nourishing salad for yourself.
Not a cream cheese fan or can’t find any , replace it with hung curd , greek yogurt or sour cream .
Add in your favorite herbs to make it extra tasty.
Vegan’s use vegan spread and vegan cream cheese.
Make the filling ahead of time – stays good upto 3 days in the fridge .
Now you have so many reasons to make it.

easy vegan coleslaw sandwich bars
Ingredients
- 3 cups shredded green cabbage
- 2 cups shredded purple cabbage
- 2 cups shredded/grated carrots
- ½ cup cream cheese or more if required
- ½ cup vegan spread/ mayonnaise or more if required
- 1 teaspoon hot sauce of your choice*
- 1 teaspoon tomato ketchup
- 1 teaspoon vinegar or lemon juice
- 1 teaspoon yellow mustard *
- ½ teaspoon dried oregano*
- ½ teaspoon dried basil*
- salt as required to taste
- ¼ teaspoon crushed black pepper
- Bread slices
Instructions
- In a large bowl , mix in all the sauces, spread and herbs to make a smooth paste.
- Now add in the veggies little at a time, fold them in the paste and press down .
- Mix it well until they are coated properly.
- Add salt towards the end after taste test as the sauces and spreads already have salt.
- Take bread slices , cut off the edges if desired.
- Now spread coleslaw over a bread slice and cover it with another. With a sharp knife cut long bars or shape of your choice.
Notes
Mustard sauce is optional but gives amazing flavor to the coleslaw.
If not vegan then substitute vegan cream cheese with regular one , greek yogurt, hung curd or sour cream.
Add herbs of your choice.
Filling stays good upto 3 days in the fridge.

Hi , Yes , they will . Just prepare the coleslaw and keep separately . Stuff it in the bread no more than 4 -6 hours before you eat.
