If you are pressed on time but want to make a quick healthy sweet , then you gotta try this wonderful Indian sweet – Lapsi .It is super easy ,ready in minutes , no fancy preparation or baking required.
Other names for lapsi daliya are cracked wheat, broken wheat which is very very healthy grain and should be often included in your diet. I make variety of sweet and savory stuff from lapsi daliya at least 4-5 times a month . As Diwali is around the corner today I am sharing a super simple dessert made from it.
Sweet Lapsi – cracked wheat sweet is a quick 3 main ingredients dessert which is delicious as well as healthier as compared to other Indian sweets because it does not use any processed sugar to sweeten it. It is generally prepared on auspicious occasions like gruh pravesh ( 1st day in the new house) , on Diwali , dusherra and Navratri and the first morsel is offered to god and goddesses .
I remember the very 1st time I made lapsi was the day we moved to the States. Before even making a cup of tea , the very first thing I ever made in the new apartment was sweet lapsi. I was a novice at cooking and never ever paid attention when my mom made it for us , as usual I was just interested in eating it 🙂 . My mother in law was kind enough to pack the exact proportions so that I can make it with ease. I was surprised how easy it was to make it . Just took me less than 20 minutes .
And this trend of making lapsi as the first foods continued whenever we moved to a new apartment.
Earlier days of cooking ,everytime I made lapsi , I asked myself why don’t I make this often . So whenever we crave for something sweet I do not wait for an occasion , just whip up this quick healthy dessert to satisfy our taste buds. So it’s on the menu atleast twice a month. Especially because my son has started loving it since he had this for the first time. So this is a good way of ditching the cakes, brownies and cookies and for a change feeding him with something that he loves – sweet stuff plus good for his health.
It’s important for me to know about ingredients I use so I thought I should share the same with you.

Lapsi daliya/ cracked wheat

Ghee
Many of you might be avoiding ghee in your diet. But its far better than using butter . It has a high burning point making it more desirable for cooking, especially Indian cooking as we like tadka in almost everything. Coming from a Rajasthani family I have gown up eating ghee everyday. Saying that , anything in moderation doesn’t do harm to our bodies. We need to know our limits. Well it’s a personal choice to consume ghee or not but do consider its benefits.
It’s a natural lubricant for our bodies
According to Ayurveda it increases memory
It aids digestion
Ghee aids absorption of vitamins and essential minerals and anti oxidants
It’s a better option to consider than butter
Ghee has loads of healing properties
It’s good for overall skin health

Others things that we need to enhance the flavor –
saffron, cardamom , nuts and dried fruits (optional)
So when I made this during this Navratri , I clicked quick pictures and made a short step by step tutorial of the same.
And one more important reason I decided to make a post on sweet lapsi is – if we are making lapsi on auspicious occasions we offer it to god first. That means we cannot taste it until it’s offered. I am so used to testing and tasting the preparation like 5 times at least during the process to make sure everything is fine taste wise . And this guess-work kinda kills me. I assume it’s the same with you. I keep on wondering will it be overly sweet ? will it be perfect texture wise? What if it isn’t sweet enough ?
So I always follow these easy steps and proportions that I have recorded for years now and every time I get perfect results. No more stress . This recipe can easily be doubled or tripled .
Enjoy the step by step method followed by the recipe-
I have used fine /smaller grain cracked wheat , because I prefer that. If you are using bigger grain, you might want to add more water and cook for 2-4 minutes longer.
Sautee the cracked wheat in ghee for 2-4 minutes until it turns dark brown , add hot water and saffron
keep stirring vigorously while adding water . Be careful as the mixture will splatter quiet a bit. Cook for 5-8 minutes or until the water has almost dried up and ghee starts to ooze out.
now add jaggery and cardamom . Mix well until jaggery melts completely . Cook for a minute. Add fistful of desired nuts . I have added sliced almonds.
Lapsi - cracked wheat sweet
Ingredients
- ¼ cup ghee
- ½ cup lapsi dalia / cracked wheat*
- ½ cup grated/ roughly chopped gud / jaggery
- 1.5 cups hot water
- pinch of saffron strands
- ¼ teaspoon cardamom powder
- fistful of sliced nuts like almonds pistachios * ( optional)
Instructions
- Heat ghee in a non stick pan on medium low heat.
- Once warm ,add lapsi dalia and sautee it for 2-3 minutes until dark brown in color and nutty aroma .
- Now lower the heat and add water stirring continuously for 20 seconds. Add saffron. Let lapsi cook for 5-8 minutes until the water has evaporated and lapsi stats to leave the sides of the pan and ghee oozes out. Now add grated jaggery , mix well until melted. Add cardamom and cook for 2 -3minutes until dry . Switch off the flame and toss in some sliced nuts .
Notes
To check lapsi is done, just take out pinch of it with a spoon because it will be too hot , let it cool down a bit and try mashing it between your hands. Its done when it can be smashed easily.
If you have difficulty in cutting jaggery . Just pop it in the microwave for 10 -15 seconds , it will soften up and hence easier to handle .
To save time, you can heat the water in microwave for 2 minutes or on gastop until a simmer simultaneously while you are sauteing the lapsi dalia.
Add upto ½ cup more hot water if you suspect lapsi is undercooked before adding jaggery.

Having born n brought up in Rajasthan, I have grew up eating this on all the pujas but could never make it as my mom never followed any ratio. And u solved that.
