Some FAQ’s while making muffins –
Difference between cupcakes and muffins?
I get this question a lot from my readers. There are few differences between a cupcake and a muffin
- Cupcakes are frosted while muffins are not. At the most they may have a crunchy top or streusel top made with flour , butter and sugar.
- Muffins are meant to be healthier than cupcakes.
- Muffins are generally eaten for breakfast or a snack and less sweet than cupcakes. Muffins are generally sweetened by natural ingredients like bananas, applesauce or maple/ agave / honey.
- Muffins are denser than cupcakes because they are mostly made with healthier flour or blend of flours like whole wheat, oatmeal, almond flour while some bakeries only use all purpose flour.
- Cupcakes are tender because they are mostly made using all-purpose flour.
- The pans used for cupcakes and muffins vary too. Muffins are bigger than cupcakes with domed top.
Are muffins healthy?
These chocolate banana muffins are a better swap for the all-purpose flour muffins or cupcakes. Moreover this muffin recipe is without butter and processed sugar. So that makes it a better option in my opinion.
Can I make these muffins in a cupcake pan or a muffin pan is a must?
Yes of course , you can do either or.I totally get it that you do not want to stock a lot of pans. For this recipe I have used a cupcake pan instead of a muffin pan. You will yield more cupcakes than muffins in a cupcake pan. Instructions on using both are given in the recipe card below.
Can I make banana muffins with not so ripe bananas ?
Bananas with black spots all over the peel are the best . The sweetness and the nutrition level is the highest in over ripe bananas . So it calls for less sugar to be used in the batter too. Over ripe bananas mashes well too. Saying that if you are really craving and excited to make these vegan muffins now and do not have overripe bananas just go ahead and use the ones you have and adjust sugar accordingly.
Can I make this vegan banana chocolate chip muffin recipe gluten-free ?
Yes you can make these muffins gluten-free. Just swap the wheat flour with ground oatmeal or pre mixed gluten-free flour .
Can you actually taste bananas in this muffin recipe ?
Even though these muffins have a lot of bananas the taste of bananas is subtle. This is because the chocolate tastes pretty intense and overpowers the bananas in this muffin recipe .
Can I substitute bananas with applesauce in this muffin recipe?
Yes you may. The muffins will still be super moist with applesauce .But it would no longer be banana muffins …Just to let you know 🙂
How to make the best vegan banana chocolate muffins?

For this Vegan Chocolate banana muffin recipe I have swapped all purpose flour with a blend of whole wheat and almond flour.
As these muffins have cocoa powder , as well as bananas using sugar is necessary to cut the bitterness.
Bananas are a great substitute for eggs here too. They make these muffins moist and there is a need for very little fat and sugar in this recipe.
I have made these vegan muffins healthy by using coconut sugar and avocado oil . Use your desired sugar and oil. The final result won’t make much of a difference!

I have been making this recipe for my very picky autistic daughter as a school snack for years now – I use gluten free flour and replace the sugar with ½ cup of Suki (erythretol and stevia mix). She loves it!

Shalini
Hi Khushboo, I want to use jaggery on this recipe instead of coconut sugar..how much of jaggery should be used? Any other addition/deletion of ingredients required due to this change? My jaggery powder seems to hv few coarse, hard pieces as well…shuld I pulse it in mixer before adding?
Would appreciate ur response
Thanks
Khushboo
Hello Shalini, if you are using jaggery I suggest warm up the called liquid and melt jaggery completely before using. No other changes to be made.
Shalini
Also can u mention details for replacing sugar with dates puree in any cake or muffin recipe..what other changes hv to due to addition of dates puree.. This would help amateur bakers like me to bake heathier recipes…tx a ton
Khushboo
Shalini, date puree, or any other liquid sugar alternative will change the consistency of this recipe. For healthier bakes, use jaggery powder or coconut sugar for this recipe.
Shalini
Hi Khushboo, I want to try this muffin recipe but I want to add jaggery as sweetener instead of any variety of sugar…how should I do that ? My powdered jaggery has few hard, coarse pieces too which I doubt will melt in the batter….should I pulse it in my mixer to make it fine. Also, would 1/2 cup+1 tbsp of jaggery be enough or I need to add more as I have read its less sweet than white sugar? Tx
Khushboo
Hello Shalini, you can use jaggery in this recipe, an equal amount should be fine. If jaggery pieces are hard, then warm-up the milk and melt jaggery in it. Once it comes to lukewarm temperature go ahead with the recipe. Jaggery is less sweet than white sugar but I have used coconut sugar that is almost the same sweetness as jaggery. You will have to experiment with the quantitiy here. I haven’t tried this recipe with jaggery but I know it will work.

Anne Clark
Plant-based double chocolate muffins?!?!? These look sooooo amazing! I can’t wait to try these out. I wonder if my family will be able to tell the difference between these and the sugar-filled ones? I’m not gonna tell’em 🙂
Khushboo

Asha
Is vinegar a complete must to add. What happens is I don’t add vinegar?? Asking as vinegar is not something I may have regularly at home
Khushboo
Asha, you may substitute vinegar with lime juice equal amount. The soda in the recipe needs a acid to react with hence you need something sour.
Ankita
What can be used instead of almond flour
Khushboo
Hi Ankita, sub equal amount of all-purpose flour i.e maida, whole wheat flour or oat flour is fine

dhara shah
Hi Khushboo. Can I replace both the the flours with white whole wheat flour? Thanks
Khushboo
Yes you may Dhara. There will be slight change in texture .
Tina
Can these be made without wheat flour? Perhaps almond only or a coconut & almond flour combination?
Khushboo
Yes Tina you could do only almond flour or combination of coconut and almond flour or oat flour and almond flour. If using only coconut or oat flour I would recommend using one egg replacement i.e 1 tablespoon flax seed meal dissolved in 3 tablespoon warm eater . Sit it for 1 minute until it gels up .
