When summer gives you berries you have to enjoy them to the fullest . Hello gorgeous readers today I am sharing a light summer salad with you – Vegan summer berry salad with strawberry balsamic vinaigrette . It is gluten-free as well.
Full of freshness packed with essential nutrients and anti oxidants.
Mixed greens with strawberries and blueberries and an avocado rose , my 1 st time flaunting this rose here on my blog. I just need a reason to add avocados in everything. We are an avocado addicted family. Avocado’s being one of the super foods have a special place in my heart and my plate.
Packed with good fats , has more potassium than bananas , lowers cholesterol , packed with fibre and anti – oxidants . The list is kind of endless. So do include avocados in your diet on daily basis.
It’s true that berries are available all year round here, but summer is actually the season to splurge on them. They are hell sweet and yum now.
The dressing is everything here. Fruity notes of strawberry lightly drizzled on the salad makes it tastes so good. And pairing strawberries with balsamic , I mean they are match made in heaven. Strawberries pair so well with balsamic. But if you do not have any , feel free to use normal vinegar. I prefer rice vinegar as it is not that strong and acidic in taste compared to others. As my salad has so many berries I have added a bit of spice with a dash of chilly flakes – completely optional.
I love to keep it simple , something that I can put together in a jiffy.
All you have to do is wash desired greens nicely in a colander/salad spinner in a cold running water.
Give it a quick spin to get rid of the water in a snap . I thoroughly vouch for a salad spinner , but if you do not own it , just pat the greens dry with a clean dish towel.
Roughly tear or chop it. Dump it in a bowl. Throw in some fresh berries .
Add an avocado rose if you want it to look more pretty or just chop and add it . Or just skip if you don’t have any.
Just before eating , drizzle in some yummy strawberry balsamic vinaigrette.

Vegan summer berry salad with strawberry balsamic vinaigrette
Ingredients
- For the salad
- 3 cups chopped mixed greens
- 2 avocados – one for each plate
- ½ cup blueberries
- ½ cup sliced strawberries
- For the dressing
- 6- 7 strawberries
- 1 tablespoon balsamic vinegar *
- 2 tablespoon olive oil
- 1 teaspoon agave / honey *
- Dash of salt
- Dash of pepper
- Pinch of red chilly flakes*
Instructions
- Divide the greens and berries in two serving bowls.
- Top with avocado as mentioned above
- For the dressing
- Place all ingredients except chilly flakes in the blender and blend it until smooth and emulsified , say for 20 seconds .
- Just before serving the salad , drizzle in some strawberry vinaigrette and sprinkle some chilly flakes if desired. Mix well before eating.
Notes
Skip avocado if not available.
Substitute balsamic vinegar with rice or any other vinegar of your choice or even lemon juice.
Use desired berries.
Add protein to make it more filling .
Skip chilly flakes if not preferred .

If you use honey in this recipe, you are making it officially not vegan. Although There is an astric by it, I couldn’t find anything about honey being 100% not vegan. So if you want to make this recipe vegan don’t use honey.

How long will the strawberry dressing last if stored in the fridge? I am hoping to make extra to use throughout the week. 🙂

Danielle , the oil and vinegar takes care of the shelf life . I have kept this dressing up to 5 days. So I am sure it should stay well for a week .
